Fifteen is past the point where one conversation holds. Trying to run a discussion-shaped game with fifteen people in a circle produces four people talking and eleven waiting, so the useful structures here are three teams of five, or a game where everyone plays at once.
Instructions become the bottleneck. With fifteen people, explaining a complicated game costs three or four minutes, and any rule you get wrong has to be corrected fifteen times. Pick games with rules you can state in two sentences and demonstrate in thirty seconds, and save the complicated ones for smaller groups.
An odd number also means every paired activity leaves someone out. The games below that need pairs say what to do with the spare person rather than leaving you to improvise it in front of the room.
