At thirty, logistics take over from game design. Every transition — forming teams, moving to a space, collecting equipment — costs several minutes, and a session that looked like an hour on paper is ninety minutes in a hall. Budget for it, and cut the number of different games rather than rushing each one.
Explain once, to everyone, before splitting up. Explaining the same rules separately to six teams takes four times as long and produces six slightly different versions of the game.
Thirty is large enough that elimination games become a problem: the first people out have a long wait with nothing to do, and they are usually the ones who were least keen to start with. The games below favour structures where players who are out re-enter, or switch to a different role, rather than sitting down.
